  • 2 Eggs
  • 1 cup Sugar
  • 1 cup White self-raising flour
  • 1 tablespoon butter
  • For the stuffing:
  • 2 tins NESTLÉ Cream
  • 1 cup Ricotta cheese
  • 1 cup Icing sugar
  • 1 cup fresh orange juice
  • 1 tablespoon gelatine powder
  • 200 g Strawberries

How to prepare

  1. Whisk the eggs and sugar until creamy. Sift the flour over the egg mixture and fold in carefully with a metal spoon. Fold in the melted butter.
  2. Spoon the mixture in a 20cm round baking tin and bake at 180°C for 20-25 minutes or until a skewer inserted in the middle comes out clean. Remove and cool over wire rack.
  3. Combine NESTLÉ Cream, Ricotta cheese and icing sugar. Add dissolved gelatin and orange juice to a pot and place over warm water until the gelatin dissolves. Set aside to cool a bit only and then stir it in the cream and cheese mixture.
  4. Spread the cream and cheese mixture over the cake, then garnish with fresh strawberries on top.
  5. Place in the fridge for 1 hour before serving.
