Ingredients 10 items

  • For the crust:
  • 2.5 cups or 250 g digestive biscuits crumbled
  • 0.5 cup unsalted melted butter or 100 g
  • For the filling:
  • 1 tin Nestlé® Sweetened Condensed Milk or 397 g
  • 320 ml liquid cream or 1¼ cup
  • 4 tablespoons fresh lime juice
  • 3 tablespoons lemon juice
  • 1 teaspoon Lime zest
  • 1 tablespoon gelatine powder dissolved in 2 tablespoons hot water

How to prepare

  1. Combine biscuit crumbs and butter in a bowl, rub the ingredients to combine well, press the mixture over the base and sides of a 26cm loose bottom tart tin. Set in the fridge for 10 minutes.
  2. Combine Nestlé® Sweetened Condensed Milk, liquid cream, lime juice, lemon juice and grated lime zest in a mixing bowl and whip for 4-5 minutes or until mixture becomes almost thick.
  3. Pour the dissolved gelatine over with constant whipping until well combined then pour evenly over the prepared base.
  4. Place in fridge for 3 hours until it sets then serve.
