  • 0.5 cup white self-raising flour or 70 g
  • 0.5 cup desiccated coconut or 50 g
  • 1 egg yolk
  • 2 tablespoons brown sugar
  • 65 ml melted butter or ¼ cup
  • 1 cup dried apricots or 80 g cut into small cubes
  • 1 tin Nestlé® Sweetened Condensed Milk or 397 g
  • 1 cup desiccated coconut or 100 g extra
  • 110 g toasted and cracked or ¾ cup unsalted cashew nuts
  • 2 eggs
  • 1 teaspoon vanilla essence
  • 100 g melted dark chocolate
  • 100 g melted white chocolate

How to prepare

  1. Combine flour, coconut, egg yolk, brown sugar and butter. Mix well.
  2. Press into base of greased 20x25cm baking tin and bake in a preheated oven at 180°C for 10 minutes and cool slightly.
  3. Place apricot cubes in pan with enough water to just cover, bring to aboil then reduce heat and simmer for 2 minutes. Remove from heat, cool and drain.
  4. Combine the prepared apricot with Nestlé® Sweetened Condensed Milk, the extra coconut, cracked cashew nuts, eggs and vanilla; Mix well and spread over base.
  5. Bake in a preheated oven at 180°C for 20-25 minutes or until the middle is firm.
  6. Spread dark and white melted chocolate over the top and allow setting before slicing.
