Heat oil in a large pot, add and cook onions and garlic for 3 minutes or until tender.
Add potatoes, eggplant, okra and carrots, stir for another 5-6 minutes. Add green chili, coriander, tomatoes, tomato paste, MAGGI Chicken Stock cubes, adeny chili mixture and water.
Bring to a boil, simmer for 15-20 minutes or until vegetables are cooked.
