  • 3 tablespoons vegetable oil
  • 1 medium onion or 125 g, chopped
  • 3 cloves garlic, crushed
  • 2 medium potatoes or 500 g, wedged
  • 1 medium eggplant or 250 g, cut into large cubes
  • 250 g okra, large size, trimmed and cut into halves
  • 2 medium carrots or 300 g, cut into large cubes
  • 2 small chili peppers, green, chopped
  • 1 cup coriander leaves or 75 g, chopped
  • 3 medium tomatoes or 450 g, peeled and chopped
  • 2 tablespoons tomato paste
  • 2 cubes MAGGI Chicken Stock
  • 4 tablespoons adeny chili mixture, Adeny besbas
  • 5 cups water or 1250 ml

How to prepare

  1. Heat oil in a large pot, add and cook onions and garlic for 3 minutes or until tender.
  2. Add potatoes, eggplant, okra and carrots, stir for another 5-6 minutes. Add green chili, coriander, tomatoes, tomato paste, MAGGI Chicken Stock cubes, adeny chili mixture and water.
  3. Bring to a boil, simmer for 15-20 minutes or until vegetables are cooked.
