Tabikh Okra with Potato

3 tablespoons vegetable oil

1 medium onion or 125 g, chopped

3 cloves garlic, crushed

700 g okra large size, trimmed and cut into halves

¼ teaspoon ground black pepper

¼ teaspoon ground cinnamon

¼ teaspoon ground cumin
-
¼ teaspoon ground cardamom
-
¼ teaspoon ground cloves

¼ teaspoon ground coriander

2 medium tomatoes or 300 g, peeled and diced

2 tablespoons tomato paste
-
½ cup coriander leaves or 35 g, chopped

2 cubes MAGGI Chicken Stock

4 cups water or 1 liter

2 medium potatoes or 500 g, cut into large cubes
Add ingredients to my basket
How to prepare

Heat oil in a large saucepan. Add onion and garlic then cook for 4 minutes or until they become golden in color.

Add okra. Stir for 4 minutes then add spices, tomato, tomato paste, coriander, MAGGI Chicken Stock cubes and water.

Bring to a boil, simmer over low heat for 15 minutes or until okra is almost cooked.

Add potatoes, cover and simmer over low heat for another 15-20 minutes or until it's cooked.
