  • For the vanilla custard:
  • 2.5 cups Water
  • 1 tin NESTLÉ Sweetened Condensed Milk
  • 2 teaspoons Vanilla essence
  • 5 Egg yolks
  • 4 tablespoons Cornstarch
  • Additional:
  • 2 packets Puff pastry
  • 3.5 cups fruit salad
  • 0.5 cup Apricot jam

How to prepare

  1. Roll the puff pastry using a rolling pin to stretch it and make it thinner before cutting it into 30cm × 10cm rectangles. Arrange them in a non-stick pan and keep them in the fridge for 10 minutes to set before baking.
  2. In the meantime, prepare the vanilla custard: Boil the water, NESTLÉ Sweetened Condensed Milk and vanilla essence in a large saucepan. In a bowl, mix the egg yolks and cornstarch and add them to the boiled mixture. Cook over medium heat for 5 minutes until they get a thick texture. Keep aside to cool down.
  3. Preheat the oven at 200 °C and bake the puff pastry for 15 minutes until golden in color. Keep aside for 10 minutes to cool. Pour a layer of the vanilla custard on top of the baked puff pastry, add some mixed fruits and brush them with apricot jam.
